Pumpkin Protein Pancake Recipe

I love pancakes, but traditional ones are just full of carbs that are not good for someone looking for a healthy meal plan to lose weight, so one of my friends developed a pumpkin protein pancake recipe that is amazingly fluffy, nutritious, and delicious!

Protein Pancake Recipe Can Be Used to Make Muffins

While I love pancakes, I’ve also adapted this pumpkin protein pancake recipe to make muffins, because pancakes just take too much time to make one at a time. So, I make a big batch of muffins, and they are the perfect grab-and-go solution for breakfast, a mid-morning or mid-afternoon snack, or after a workout (because you deserved it!). I’ll have one muffin for a snack or two for a meal. You can also freeze them for later when you want to eat them, but whenever I make these muffins they only last me a week!

Pumpkin Protein Pancake Recipe:

[Muffin adaption in brackets]


(makes 1 pancake)

4 egg whites (I used 3 Tbs of All Whites) [2 ΒΌ cup All Whites]
2 scoops vanilla protein powder [4 cups vanilla protein powder]
2 Tbs pumpkin [1.5 cups pumpkin]
1 tsp cinnamon [1/8 cup cinnamon]

1 tsp pumkin spice powder
